Ingredients
  

For the Base
  • 2 cups shredded cooked chicken
  • 4 cups mixed salad greens such as spinach, romaine, and arugula
  • 1 cup cucumber thinly sliced
  • 1 cup carrots julienned
For the Dressing
  • 3 tablespoons lime juice freshly squeezed
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar or honey
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
  • 1 tablespoon cilantro chopped, for garnish
For the Topping
  • 1/4 cup peanuts chopped, for garnish
  • 1/4 cup red bell pepper thinly sliced

Method
 

Prepare the Chicken and Vegetables
  1. If not already cooked, boil or grill the chicken until fully cooked, then shred it.
  2. In a large bowl, combine the shredded chicken, mixed salad greens, cucumber, and carrots.
Make the Dressing
  1. In a small bowl, whisk together the lime juice, fish sauce, sugar, sesame oil, grated ginger, and minced garlic until well combined.
  2. Taste and adjust seasoning if necessary, adding more lime juice or fish sauce to your preference.
Combine Salad and Dressing
  1. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  2. Let the salad sit for about 5 minutes to allow the flavors to meld.
Serve the Salad
  1. Divide the salad among serving plates.
  2. Top with chopped peanuts, sliced red bell pepper, and chopped cilantro before serving.
