This comforting Slow Cooker Chicken and Rice dish combines tender chicken, fluffy rice, and a blend of vegetables, all cooked together for a delicious and easy meal.

Ingredients
  

For the Base
  • 1 pound boneless, skinless chicken thighs
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots sliced
  • 1 cup peas frozen or fresh
For the Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme

Method
 

Prepare the Ingredients
  1. Chop the onion and garlic, and slice the carrots.
  2. In a bowl, mix together the salt, pepper, paprika, and thyme.
Assemble in the Slow Cooker
  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add the chopped onion, garlic, carrots, and rice on top of the chicken.
  3. Pour the chicken broth over the ingredients.
  4. Sprinkle the seasoning mix evenly over the top.
Cook
  1. Cover the slow cooker and cook on low for 6 hours or until the chicken is tender and the rice is cooked.
Add Peas
  1. In the last 30 minutes of cooking, add the peas to the slow cooker.
Shred Chicken
  1. Once cooked, remove the chicken thighs and shred them using two forks.
  2. Return the shredded chicken to the slow cooker and stir to combine.
Serve
  1. Spoon the chicken and rice mixture into bowls and enjoy!
