Prepare the Ingredients
- Chop the onion and garlic, and slice the carrots.
- In a bowl, mix together the salt, pepper, paprika, and thyme.
Assemble in the Slow Cooker
- Place the chicken thighs at the bottom of the slow cooker.
- Add the chopped onion, garlic, carrots, and rice on top of the chicken.
- Pour the chicken broth over the ingredients.
- Sprinkle the seasoning mix evenly over the top.
Cook
- Cover the slow cooker and cook on low for 6 hours or until the chicken is tender and the rice is cooked.
Add Peas
- In the last 30 minutes of cooking, add the peas to the slow cooker.
Shred Chicken
- Once cooked, remove the chicken thighs and shred them using two forks.
- Return the shredded chicken to the slow cooker and stir to combine.
Serve
- Spoon the chicken and rice mixture into bowls and enjoy!
