Lemon Chicken Romano

Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup all-purpose flour for dredging
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup grated Romano cheese
  • 1 cup chicken broth
  • 1 tablespoon olive oil for cooking
  • 1 tablespoon butter for flavor
For the Lemon Sauce
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon fresh parsley chopped, for garnish

Method
 

Prepare the Chicken
  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, mix together flour, salt, and pepper. In another dish, beat the eggs. In a third dish, place the grated Romano cheese.
  3. Dredge each chicken breast in the flour mixture, dip into the eggs, then coat with Romano cheese.
  4. In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the chicken and cook until golden brown on both sides, about 4-5 minutes per side.
  5. Transfer the browned chicken to a baking dish and pour chicken broth around the chicken. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through.
Make the Lemon Sauce
  1. In a small bowl, combine lemon juice and lemon zest.
  2. Once the chicken is done baking, remove from oven and drizzle the lemon sauce over the chicken before serving.
  3. Garnish with fresh parsley.
