Ingredients
  

For the Base
  • 1 pound chicken breast cut into bite-sized pieces
  • 1 package gnocchi about 16 ounces
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
For the Sauce
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 cup spinach fresh
For Topping
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons parsley chopped for garnish

Method
 

  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  3. Add chicken broth and heavy cream to the skillet. Stir in Italian seasoning and bring to a simmer.
  4. Add the gnocchi to the skillet and cook for about 3-5 minutes or until they float to the top.
  5. Stir in the cooked chicken and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts.
  6. Sprinkle the grated Parmesan cheese over the top and allow it to melt slightly.
