These customizable breakfast sandwiches are perfect for busy mornings. Make a batch in advance, freeze them, and enjoy a hearty meal anytime with minimal effort.

Ingredients
  

For the Base
  • 6 English muffins English muffins
  • 6 large eggs for frying
  • 6 slices cheddar cheese
  • 1 tablespoon olive oil for frying eggs
For the Topping
  • 6 slices cooked bacon or sausage patties

Method
 

Prepare Ingredients
  1. Preheat a skillet over medium heat and add olive oil.
  2. Slice the English muffins in half and set aside.
Cook the Eggs
  1. Crack eggs into the skillet, cooking them until the whites are set but yolks are still runny, about 3-4 minutes.
  2. If desired, cover the skillet briefly to help cook the tops of the eggs.
Assemble the Sandwiches
  1. On the bottom half of each English muffin, place a slice of cheddar cheese.
  2. Add a cooked egg on top of the cheese, followed by a slice of bacon or a sausage patty.
  3. Top with the other half of the English muffin.
Wrap and Freeze
  1. Wrap each sandwich tightly in plastic wrap or aluminum foil.
  2. Place wrapped sandwiches in a freezer-safe bag or container and freeze for up to 2 months.
Reheat and Serve
  1. To reheat, unwrap the sandwich and microwave on high for 1-2 minutes or until heated through.
  2. Alternatively, you can bake them in a 350°F (175°C) oven for about 15-20 minutes.
