Chocolate Chip Muffins

Delicious, fluffy chocolate chip muffins perfect for breakfast or a snack. These muffins are easy to make and loaded with chocolate chips.

Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 cup milk whole or 2%
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup chocolate chips semi-sweet

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the sugar, melted butter, eggs, milk, and vanilla extract until well combined.
Mixing
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  2. Gently fold in the chocolate chips, reserving a few for topping.
Baking
  1. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  2. Sprinkle the reserved chocolate chips on top of the batter in the cups.
  3. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Cooling
  1. Remove the muffins from the oven and let them cool in the pan for 5 minutes.
  2. Transfer the muffins to a wire rack to cool completely.

Notes

For extra moisture, you can add half a mashed banana to the wet ingredients or substitute some of the sugar with brown sugar.
