  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • ¼ cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping vegetables into bite-sized pieces.
  2. In a large pot over medium-high heat, sear the cubed pork belly until crispy, about 8–10 minutes. Remove and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  4. Stir in cannellini beans and vegetable broth; bring to a gentle simmer while scraping up browned bits from the pot.
  5. Return pork belly to the pot; season with salt and pepper. Let simmer for 30 minutes to meld flavors.
  6. For the pistou, blend basil, parsley, garlic, olive oil, and Parmesan until smooth. Serve hotpot topped with pistou.
