  • 1 cup dried porcini mushrooms
  • 3 tbsp extra virgin olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup red wine
  • 2 cups vegetable broth (or chicken broth)
  • 8 oz spaghetti or pappardelle pasta
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Soak the dried porcini mushrooms in warm water for about 20 minutes until rehydrated. Drain and chop.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
  3. Stir in minced garlic and chopped porcini mushrooms; sauté for an additional 3-4 minutes until browned.
  4. Add tomato paste and red wine to the skillet; simmer for 5-7 minutes until reduced by half.
  5. Pour in vegetable broth and bring to a gentle simmer for about 20 minutes until thickened.
  6. Cook pasta according to package instructions until al dente. Drain and reserve some pasta water.
  7. Toss cooked pasta with the ragù, adding reserved pasta water if needed. Serve hot with freshly grated Parmesan.
