Description

Seared Wagyu strips with blackberry gastrique is a luxurious dish that marries rich, tender beef with a tangy-sweet sauce. This recipe transforms simple ingredients into a gourmet experience perfect for special occasions or an impressive weeknight dinner. The delicate pairing of flavors and textures will leave your guests raving about the meal long after it’s gone.

Ingredients

Scale
  • 1 pound Wagyu beef strips
  • 1 cup fresh blackberries (or 1 cup frozen blackberries)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 1 medium shallot, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the shallots and having the blackberries ready.
  2. For the blackberry gastrique, combine blackberries, red wine vinegar, honey, and shallots in a saucepan over medium heat. Cook for about 10 minutes until the blackberries are soft.
  3. Strain the mixture through a fine sieve to remove seeds and solids.
  4. Heat olive oil in a skillet over high heat. Season the Wagyu strips with salt and pepper, then sear them in the hot pan for 2-3 minutes on each side until browned and cooked to your desired doneness.
  5. Let the strips rest for five minutes before slicing against the grain. Serve drizzled with blackberry gastrique.
