Ingredients

Scale
  • 8 corn tortillas
  • 2 cups pulled pork (slow-cooked and shredded)
  • 1 cup salsa verde
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 cup diced tomatoes
  • ½ cup queso fresco (crumbled)
  • 2 lime wedges

Instructions

  1. Preheat oven to 400°F (200°C). Arrange corn tortillas on a baking sheet and lightly brush with oil. Bake for about 10 minutes or until golden and crispy.
  2. If making pulled pork from scratch, season a pork shoulder and slow-cook it in a crockpot on low for 8 hours until fork-tender. Shred using two forks.
  3. Layer each crispy tortilla with pulled pork, followed by shredded lettuce and diced tomatoes.
  4. Generously drizzle salsa verde over the top.
  5. Garnish with crumbled queso fresco and serve immediately with lime wedges on the side.
