Ingredients
- 1 lb raw shrimp, peeled and deveined
- 1/4 cup freshly squeezed lime juice
- 1 cup full-fat coconut milk
- 1 cup jasmine rice
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 green onions, chopped
- 2 tbsp honey
- 2 tbsp low-sodium soy sauce
- Olive oil for sautéing
- Salt and pepper to taste
Instructions
- Prepare your ingredients by mincing garlic, dicing bell pepper, and squeezing lime juice.
- In a medium pot, combine jasmine rice with coconut milk and water per package instructions. Bring to a boil, then reduce heat to low, cover, and simmer until fluffy (about 15 minutes).
- In a large skillet over medium heat, add olive oil and sauté garlic and red bell pepper until softened (about 3 minutes).
- Add shrimp to the skillet along with honey, lime juice, soy sauce, salt, and pepper. Cook until shrimp are pink and opaque (about 5 minutes).
- Combine cooked rice with the shrimp and vegetable mixture in the skillet until well mixed.
- Serve hot topped with chopped green onions.
