  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup freshly squeezed lime juice
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 cup chopped cilantro
  • 2 tbsp honey
  • 1 tsp chili powder
  • 2 ripe avocados

Instructions

  1. In a bowl, whisk together olive oil, lime juice, garlic, honey, chili powder, and cilantro. Place chicken in a resealable bag and pour marinade over it. Seal and refrigerate for at least 1 hour (or overnight).
  2. Heat the grill to medium-high (375°F) or preheat the oven to 400°F.
  3. Remove chicken from marinade and discard marinade. Grill for about 5-7 minutes per side until cooked through (internal temp of 165°F). If baking, place in a dish and bake for about 25-30 minutes.
  4. Slice avocados in half, remove pits, sprinkle with salt, and drizzle with lime juice.
  5. Let chicken rest for five minutes before slicing. Arrange on plates with avocado halves and drizzle with any remaining marinade.
