- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/2 cup freshly squeezed lime juice
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 cup chopped cilantro
- 2 tbsp honey
- 1 tsp chili powder
- 2 ripe avocados
Instructions
- In a bowl, whisk together olive oil, lime juice, garlic, honey, chili powder, and cilantro. Place chicken in a resealable bag and pour marinade over it. Seal and refrigerate for at least 1 hour (or overnight).
- Heat the grill to medium-high (375°F) or preheat the oven to 400°F.
- Remove chicken from marinade and discard marinade. Grill for about 5-7 minutes per side until cooked through (internal temp of 165°F). If baking, place in a dish and bake for about 25-30 minutes.
- Slice avocados in half, remove pits, sprinkle with salt, and drizzle with lime juice.
- Let chicken rest for five minutes before slicing. Arrange on plates with avocado halves and drizzle with any remaining marinade.
