  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers, diced (assorted colors)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine rinsed quinoa with 2 cups of water; bring to a boil.
  2. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Remove from heat and let sit covered for 5 minutes.
  3. While quinoa cooks, dice bell peppers and finely chop red onion.
  4. In a large bowl, combine cooked quinoa, black beans, bell peppers, red onion, and cilantro. Toss gently.
  5. Squeeze lime juice over the mixture and drizzle with olive oil. Season with salt and pepper to taste; toss again.
  6. Chill in the fridge for about 30 minutes before serving for optimal flavor melding.
