- 2 cups cooked jasmine rice
- 1 cup fresh or frozen shrimp (peeled and deveined)
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 large eggs
- 3 cloves garlic (minced)
- 3 tbsp soy sauce
- 2 green onions (chopped)
- 1 tbsp sesame oil
- 2 tbsp vegetable oil (for cooking)
Instructions
- Prepare your ingredients by chopping the vegetables, mincing the garlic, and whisking the eggs in a bowl.
- Heat a large skillet over medium-high heat with 1 tbsp vegetable oil. Scramble the eggs until just set; remove and set aside.
- Add remaining oil to the skillet and cook shrimp for about 3 minutes until they are pink and opaque.
- Stir in garlic and mixed vegetables; sauté for another 5 minutes until the vegetables are tender-crisp.
- Add cooked jasmine rice to the skillet, breaking up any clumps, and stir-fry together for a couple of minutes.
- Drizzle soy sauce over the mixture while stirring. Return scrambled eggs to the pan along with green onions and sesame oil; mix well.
