  • 34 lb beef chuck roast
  • 4 large carrots, cut into chunks
  • 1.5 lb Yukon Gold potatoes, quartered
  • 1 medium onion, coarsely chopped
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 1 tbsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop carrots and potatoes; coarsely chop onion; mince garlic.
  2. Rub chuck roast with salt, pepper, and dried thyme.
  3. Heat oil in a skillet over medium-high heat and sear all sides of the roast until browned (about 4-5 minutes per side).
  4. Place onions at the bottom followed by carrots and potatoes. Nestle seasoned roast on top.
