Ingredients

  • 4 large Russet potatoes
  • 1 lb sirloin or ribeye steak
  • 1 cup shredded sharp cheddar cheese
  • 1 cup sour cream
  • ¼ cup chopped green onions
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes. Poke holes in each potato using a fork.
  3. Rub olive oil on the potatoes and season generously with salt and pepper.
  4. Place potatoes directly on the oven rack or on a lined baking sheet. Bake for 45-60 minutes until tender.
  5. While the potatoes bake, cut the steak into bite-sized pieces, season with salt and pepper, and sear in a hot skillet for about 4-5 minutes.
  6. Once baked, slice open the potatoes, fluff the insides with a fork, and add butter and cheese immediately to let them melt.
  7. Top with sour cream, green onions, and steak bites.
