- 4 large Russet potatoes
- 1 lb sirloin or ribeye steak
- 1 cup shredded sharp cheddar cheese
- 1 cup sour cream
- ¼ cup chopped green onions
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the russet potatoes. Poke holes in each potato using a fork.
- Rub olive oil on the potatoes and season generously with salt and pepper.
- Place potatoes directly on the oven rack or on a lined baking sheet. Bake for 45-60 minutes until tender.
- While the potatoes bake, cut the steak into bite-sized pieces, season with salt and pepper, and sear in a hot skillet for about 4-5 minutes.
- Once baked, slice open the potatoes, fluff the insides with a fork, and add butter and cheese immediately to let them melt.
- Top with sour cream, green onions, and steak bites.
