  • 8 oz fusilli pasta
  • 2 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 1 cup low-sodium beef broth
  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese, divided
  • 1 tbsp fresh thyme leaves

Instructions

  1. Slice onions and gather all ingredients.
  2. Cook fusilli pasta in salted boiling water for 8 minutes until al dente. Drain and set aside (do not rinse).
  3. In a large skillet over medium heat, melt butter. Add sliced onions and cook for about 20 minutes until golden brown, stirring occasionally.
  4. Pour in beef broth and simmer for 5 minutes. Stir in heavy cream and thyme, allowing it to bubble gently. Mix in half of the Gruyère cheese until melted.
  5. Add cooked pasta to the sauce, tossing until well coated.
  6. Serve topped with remaining Gruyère cheese and additional thyme if desired.
