Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Greek yogurt
  • 1 medium cucumber, diced
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp fresh dill, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tbsp extra virgin olive oil
  • ¼ red onion (optional), thinly sliced

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken with salt and pepper. Grill until golden brown and cooked through, approximately 6-7 minutes per side.
  2. In a bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, salt, and pepper. Mix until smooth.
  3. Dice cucumber and slice red onion if using; set aside.
  4. Once chicken cools slightly, chop into bite-sized pieces. In a large bowl, mix chicken with cucumber and onion.
  5. Pour dressing over the chicken mixture and stir gently to coat evenly.
  6. Cover and refrigerate for at least 30 minutes to meld flavors before serving.
