- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup Greek yogurt
- 1 medium cucumber, diced
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp fresh dill, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tbsp extra virgin olive oil
- ¼ red onion (optional), thinly sliced
Instructions
- Preheat grill or skillet over medium heat. Season chicken with salt and pepper. Grill until golden brown and cooked through, approximately 6-7 minutes per side.
- In a bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, salt, and pepper. Mix until smooth.
- Dice cucumber and slice red onion if using; set aside.
- Once chicken cools slightly, chop into bite-sized pieces. In a large bowl, mix chicken with cucumber and onion.
- Pour dressing over the chicken mixture and stir gently to coat evenly.
- Cover and refrigerate for at least 30 minutes to meld flavors before serving.
