  • 4 large eggs
  • 1 cup granulated sugar (divided)
  • 1 tsp pure vanilla extract

Instructions

  1. Prepare the caramel: In a medium saucepan over medium heat, melt 1 cup of granulated sugar until it turns golden brown. Quickly pour into ramekins or a baking dish, swirling to coat the bottom.
  2. Blend the flan mixture: In a blender, combine sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth and creamy.
  3. Assemble: Pour the flan mixture over the set caramel in molds, filling them three-quarters full.
  4. Bake: Place molds in a larger baking dish filled halfway with hot water. Bake at 350°F (175°C) for about 50-60 minutes until set but slightly jiggly in the center.
  5. Cool and serve: Allow to cool at room temperature before refrigerating for at least four hours. To serve, invert onto plates so the caramel flows over.
