Tex-Mex Beef Enchiladas are a flavor-packed delight, featuring seasoned beef wrapped in tortillas, smothered in zesty sauce, and topped with gooey cheese—perfect for any occasion!


Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 2 cups enchilada sauce
  • 1 can (15 oz) black beans, drained (optional)
  • 1 medium onion, chopped
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat oil over medium heat and sauté onions until translucent (about 5 minutes).
  3. Add ground beef, seasoning with salt and pepper; cook until browned (6-8 minutes). Stir in chili powder and cumin.
  4. If using, add black beans and mix well.
  5. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in a baking dish.
  6. Pour enchilada sauce over the tortillas and sprinkle with cheese.
  7. Bake for 20-25 minutes until bubbly. Let cool slightly before serving.
