- 8 corn tortillas
- 2 cups shredded cheddar and Monterey Jack cheese blend
- 2 cups enchilada sauce
- 1 can (15 oz) black beans, drained (optional)
- 1 medium onion, chopped
- ¼ cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat oil over medium heat and sauté onions until translucent (about 5 minutes).
- Add ground beef, seasoning with salt and pepper; cook until browned (6-8 minutes). Stir in chili powder and cumin.
- If using, add black beans and mix well.
- Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in a baking dish.
- Pour enchilada sauce over the tortillas and sprinkle with cheese.
- Bake for 20-25 minutes until bubbly. Let cool slightly before serving.
