  • 2 lbs boneless pork loin
  • 1 cup fresh apple cider
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2 tbsp brown sugar
  • Salt & pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a roasting pan with nonstick spray.
  2. Season pork loin generously with salt and pepper.
  3. In a hot skillet over medium-high heat, sear pork on all sides until golden brown, about 3-4 minutes per side.
  4. Transfer the pork to the roasting pan. In the same skillet, sauté onions and garlic until soft, about 3 minutes. Add apple cider, thyme, brown sugar, and chicken broth; stir to combine.
  5. Pour the mixture over the pork in the roasting pan and cover with aluminum foil.
  6. Roast for about 1 hour or until internal temperature reaches at least 145°F (63°C). Remove foil for the last few minutes to create a golden crust.
