- 4 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 cup dried cranberries
- 1 cup cherry tomatoes, halved

- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in boiling salted water until al dente (8-10 minutes). Drain and cool under cold water.
- In a large bowl, combine the cooked pasta, spinach, feta, cranberries, cherry tomatoes, and red onion.
