Ingredients

  • 4 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup dried cranberries
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in boiling salted water until al dente (8-10 minutes). Drain and cool under cold water.
  2. In a large bowl, combine the cooked pasta, spinach, feta, cranberries, cherry tomatoes, and red onion.
