- 8 sheets phyllo dough
- 1 lb large peeled shrimp
- 2 ripe avocados
- 2 tsp chili powder
- 1 tsp cumin
- 2 tbsp lemon juice
- ¼ cup fresh cilantro, chopped
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Lay out phyllo sheets and cover with a damp cloth.
- Cut phyllo into squares. Press two squares into muffin tins to form cups.
- Brush phyllo cups with olive oil and bake for 10-12 minutes until golden brown.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add shrimp with chili powder and cumin. Cook until shrimp turn pink (about 3-4 minutes).
- In a bowl, mash avocados with lemon juice and cilantro; season with salt.
- Assemble by spooning avocado mixture into baked phyllo cups and topping with sautéed shrimp. Serve warm.
