Description

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup long-grain white rice (rinsed)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • ½ tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 5-7 minutes on each side until golden brown.
  2. Add chopped onions and minced garlic to the skillet; sauté until the onions are translucent, about 3 minutes.
  3. Pour in the chicken broth and cream of mushroom soup; stir until well combined.
  4. Stir in the rinsed rice, coating it with sauce, then bring to a gentle simmer.
  5. Cover the skillet tightly with a lid, reduce heat to low, and cook undisturbed for 20-25 minutes until the rice absorbs all liquid.
