- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup long-grain white rice (rinsed)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- ½ tsp paprika
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 5-7 minutes on each side until golden brown.
- Add chopped onions and minced garlic to the skillet; sauté until the onions are translucent, about 3 minutes.
- Pour in the chicken broth and cream of mushroom soup; stir until well combined.
- Stir in the rinsed rice, coating it with sauce, then bring to a gentle simmer.
- Cover the skillet tightly with a lid, reduce heat to low, and cook undisturbed for 20-25 minutes until the rice absorbs all liquid.
