Ingredients

  • 1 lb 80/20 ground beef
  • 2 tbsp taco seasoning
  • 8 small flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/2 cup sour cream or Greek yogurt
  • Salsa or hot sauce to taste

Instructions

  1. Chop lettuce, tomatoes, onion, and avocado. Warm tortillas in a pan over low heat.
  2. In a large skillet over medium-high heat, cook ground beef until browned (about 5-7 minutes). Drain excess fat if needed.
  3. Sprinkle taco seasoning over the cooked beef, stir well. Add approximately 1/4 cup water and cook until thickened (3-5 minutes).
  4. Lay warm tortillas flat on plates. Spoon seasoned beef onto each tortilla and top with cheese.
  5. Pile on lettuce, tomatoes, onions, avocado slices, sour cream (or Greek yogurt), and salsa as desired.
  6. Serve immediately while warm.
