- 2 tablespoons Cajun seasoning
Instructions
- Chop onion, bell peppers, and celery into small pieces; set aside.
- In a large pot over medium heat, brown the sliced Andouille sausage for about 5 minutes. Remove from pot and set aside.
- In the same pot, sauté the chopped onion, bell peppers, and celery until softened (about 6 minutes).
- Add diced chicken thighs and crushed tomatoes; stir well.
- Pour in chicken broth and stir in Cajun seasoning. Simmer on low heat for about 30 minutes to allow flavors to meld.
- Serve over cooked rice or with crusty bread. Garnish with fresh parsley if desired.
