  • 1 lb skinless chicken thighs, diced
  • 8 oz Andouille sausage, sliced
  • 1 cup bell peppers (mixed red and green), diced
  • 1 large onion, diced
  • 1 cup celery, diced
  • 1 can (14 oz) crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tablespoons Cajun seasoning

Instructions

  1. Chop onion, bell peppers, and celery into small pieces; set aside.
  2. In a large pot over medium heat, brown the sliced Andouille sausage for about 5 minutes. Remove from pot and set aside.
  3. In the same pot, sauté the chopped onion, bell peppers, and celery until softened (about 6 minutes).
  4. Add diced chicken thighs and crushed tomatoes; stir well.
  5. Pour in chicken broth and stir in Cajun seasoning. Simmer on low heat for about 30 minutes to allow flavors to meld.
  6. Serve over cooked rice or with crusty bread. Garnish with fresh parsley if desired.
