  • 1 lb lean ground beef (80/20)
  • 1 cup plain breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 8 oz cremini mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 1 cup sour cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, parsley, garlic, onion, salt, and pepper until just combined.
  2. Shape the mixture into golf-ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat; add meatballs in batches and sear until browned on all sides (about 5 minutes). Remove from skillet.
  4. In the same skillet, sauté mushrooms until golden (about 5 minutes). Add beef broth and bring to a simmer.
  5. Return meatballs to the skillet; let them simmer in the gravy for about 10 minutes.
  6. Stir in sour cream until blended; adjust seasoning if necessary. Serve warm.
