- 1 cup plain breadcrumbs

- 8 oz cremini mushrooms, sliced
- 2 cups low-sodium beef broth
- 1 cup sour cream
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, mix ground beef, breadcrumbs, parsley, garlic, onion, salt, and pepper until just combined.
- Shape the mixture into golf-ball-sized meatballs and place them on a parchment-lined baking sheet.
- Heat olive oil in a skillet over medium heat; add meatballs in batches and sear until browned on all sides (about 5 minutes). Remove from skillet.
- In the same skillet, sauté mushrooms until golden (about 5 minutes). Add beef broth and bring to a simmer.
- Return meatballs to the skillet; let them simmer in the gravy for about 10 minutes.
