  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sofrito and sauté until fragrant.
  2. Stir in pigeon peas, cumin, and oregano; cook for about 2 minutes.
  3. Add rinsed rice and chicken broth; stir gently to combine.
  4. Bring to a boil, then reduce heat to low and cover tightly. Simmer for 20-25 minutes until liquid is absorbed and rice is tender.
  5. Remove from heat and let sit covered for another 5 minutes. Fluff rice with a fork before serving.
