- 1 cup chopped fresh parsley
- 1 cup diced ripe tomatoes
- 1 cup diced cucumber
- 8 oz high-quality halloumi cheese
- 2 tbsp freshly squeezed lemon juice
- ¼ cup extra virgin olive oil
- ½ cup chopped fresh mint leaves
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until water runs clear. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside to cool.
- While quinoa cooks, finely chop parsley, tomatoes, cucumber, and mint leaves.
- Preheat grill over medium heat. Slice halloumi into thick slabs (about ½ inch) and grill for 2-3 minutes on each side until golden brown.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to create the dressing.
- In a large mixing bowl, combine cooled quinoa with chopped veggies and grilled halloumi. Drizzle dressing over the mixture and toss gently to combine.
