  • 1 cup shredded carrots

  • 2 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey or maple syrup

Instructions

  1. Cook the rice vermicelli noodles according to package instructions (about 3 minutes). Drain and rinse under cold water.
  2. Wash and slice the mixed greens, carrots, cucumber, and bell pepper into thin strips.
