Description

Asian Cucumber Salad is a refreshing, crunchy side dish that bursts with tangy and sweet flavors, perfect for summer gatherings or light meals.


Ingredients

  • 2 firm cucumbers
  • 3 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 teaspoon chili flakes (adjust to taste)
  • ½ teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. Thinly slice the cucumbers and place them in a large bowl.
  2. In a separate bowl, whisk together rice vinegar, sesame oil, minced garlic, sugar, salt, and chili flakes until well combined.
  3. Pour the dressing over the cucumbers and add chopped green onions. Toss gently to coat.
  4. Cover and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Serve chilled, garnished with additional green onions if desired.
