Instructions
- Preheat the oven to 425°F (220°C).
- Rinse the chicken under cold water and thoroughly pat dry with paper towels.
- Rub olive oil all over the chicken, then season generously with salt and pepper.
- Stuff the cavity with lemon halves, crushed garlic, and fresh herbs.
- Place the chicken breast-side up in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
