Description

Ingredients

  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 lemon, halved
  • 4 cloves garlic, crushed
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken under cold water and thoroughly pat dry with paper towels.
  3. Rub olive oil all over the chicken, then season generously with salt and pepper.
  4. Stuff the cavity with lemon halves, crushed garlic, and fresh herbs.
  5. Place the chicken breast-side up in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10-15 minutes before carving to allow juices to redistribute.
