  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 12 oz fettuccine (or pasta of choice)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tsp Italian herbs

Instructions

  1. In a large pot over medium heat, melt the butter. Add diced chicken breasts seasoned with salt and pepper; sauté until golden brown (5-7 minutes).
  2. Stir in garlic and sauté for another minute. Pour in chicken broth to deglaze the pan.
  3. Add heavy cream; bring to a simmer. Gradually stir in Parmesan cheese until melted.
  4. Add uncooked fettuccine and stir to coat in the sauce. Cover and cook according to package directions until al dente.
