  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper, then sear for about 5 minutes per side until golden brown. Remove from skillet.
  3. Add chopped onion and minced garlic to the same skillet; sauté for 3 minutes until fragrant.
  4. Stir in rice, chicken broth, and heavy cream. Mix gently to combine.
  5. Return seared chicken to the skillet; sprinkle with Italian seasoning. Cover and simmer for 20 minutes until rice is tender.
  6. Remove from heat and stir in Parmesan cheese until melted. Serve hot.
