  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup self-raising flour
  • 1/2 cup heavy cream (for toffee sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch baking dish.
  2. In a bowl, combine chopped dates with boiling water and baking soda; let cool.
  3. In another bowl, cream the butter and brown sugar until fluffy. Add in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Fold in the cooled date mixture and sour cream until combined. Gradually sift in the self-raising flour while stirring gently.
  5. Pour the batter into the prepared dish and bake for 30-35 minutes or until golden brown.
  6. For the toffee sauce, simmer heavy cream and brown sugar in a saucepan over medium heat for about 5-7 minutes until thickened.
