  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • 1 cup cucumber, diced
  • 1 cup Greek yogurt (full-fat recommended)
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for about 6 minutes on each side until golden brown and cooked through. Let rest before slicing.
  2. Mix Greek yogurt, diced cucumber (squeezed of excess moisture), minced garlic, dill, lemon juice, salt, and pepper in a bowl until smooth.
  3. Dice cucumber and slice red onion. Feel free to add more veggies like bell peppers or tomatoes.
  4. In a large bowl, combine sliced chicken with chopped veggies. Pour tzatziki sauce over and toss gently until well coated.
  5. Cover and refrigerate for about 30 minutes to let flavors meld.
  6. Transfer to plates or bowls and garnish with fresh herbs or feta cheese if desired.
