- 2 large russet potatoes (about 2 lbs)
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup heavy cream
- 1/2 cup crispy bacon bits
- 1/4 cup chives, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wash and prick the russet potatoes with a fork. Bake for about 45 minutes until tender.
- Allow the potatoes to cool slightly, then peel and mash them in a large bowl. Gradually mix in heavy cream until creamy.
- Stir in cheddar cheese, bacon bits, salt, and pepper until well combined.
- In a greased baking dish, layer half of the potato mixture, sprinkle with additional cheese and bacon, then add the remaining potato mixture on top. Finish with more cheese.
- Lower the oven temperature to 375°F (190°C) and bake uncovered for 25-30 minutes until golden brown and bubbly.
- Garnish with chopped chives before serving.
