  • 4 boneless, skinless chicken breasts
  • 2 cups long grain rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup fresh basil leaves
  • 3 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping garlic and slicing basil leaves.
  2. In a large skillet over medium heat, heat olive oil and sauté seasoned chicken breasts for about 6 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Then add canned diced tomatoes with juices.
  4. Stir in the long grain rice and pour in the chicken broth. Season with salt and pepper; bring to a simmer.
  5. Return the cooked chicken to the skillet, cover, and simmer for about 20 minutes until rice is tender and chicken is cooked through.
  6. Stir in fresh basil before serving.
