  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 ripe mangoes, diced
  • 1/4 cup fresh cilantro, chopped
  • 8 large butter or iceberg lettuce leaves
  • 1/4 cup low-sodium soy sauce
  • Juice of 1 lime
  • 1 tsp chili paste (adjust to taste)
  • 2 tbsp vegetable oil

Instructions

  1. Prep your ingredients by washing and chopping fresh items; dice chicken, mince garlic, and chop cilantro.
  2. Heat vegetable oil in a skillet over medium-high heat. Cook the chicken until browned and cooked through.
  3. Add garlic to the skillet and sauté until fragrant (about one minute).
  4. In a bowl, whisk together soy sauce, lime juice, chili paste, and cilantro then pour over the chicken.
  5. Gently fold in diced mangoes until heated through.
  6. Spoon the mixture onto each lettuce leaf and top with extra cilantro if desired; roll up to serve.
