  • 2 medium sweet potatoes (about 2 cups mashed)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 cup evaporated milk
  • 1 pre-made pie crust

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and prick sweet potatoes with a fork, then roast them on a baking sheet for 45-60 minutes until tender.
  2. Once cooled, peel and mash the sweet potatoes in a large bowl. Mix in granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and evaporated milk until smooth.
  3. Lower the oven temperature to 350°F (175°C) and pour the filling into the prepared pie crust.
