  • 1 lb ground lamb or beef
  • 1 medium sweet onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 1 cup frozen green peas
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup milk
  • 1 cup chicken or vegetable broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, sauté diced onion and minced garlic in oil until fragrant (about 2-3 minutes). Add ground meat and cook until browned.
  3. Stir in chopped carrots, green peas, thyme, rosemary, and broth; simmer for 10 minutes until veggies are tender.
  4. Boil cubed potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and milk until smooth.
  5. Spread the meat mixture in a baking dish and top with mashed potatoes. Smooth the surface.
  6. Bake for 25-30 minutes or until the top is golden brown.
