- 1 lb ground lamb or beef
- 1 medium sweet onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, chopped
- 1 cup frozen green peas
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup milk
- 1 cup chicken or vegetable broth
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet over medium heat, sauté diced onion and minced garlic in oil until fragrant (about 2-3 minutes). Add ground meat and cook until browned.
- Stir in chopped carrots, green peas, thyme, rosemary, and broth; simmer for 10 minutes until veggies are tender.
- Boil cubed potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and milk until smooth.
- Spread the meat mixture in a baking dish and top with mashed potatoes. Smooth the surface.
- Bake for 25-30 minutes or until the top is golden brown.
