- 2 medium acorn squashes
- 1 lb ground turkey or sausage
- 1 cup cooked quinoa

- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- Halve each acorn squash lengthwise and scoop out the seeds. Drizzle cut sides with olive oil and season with salt and pepper.
- Place the squash halves cut-side down in the baking dish and roast for about 25-30 minutes until fork-tender.
- In a skillet over medium heat, add olive oil and sauté diced onion until translucent. Add minced garlic and cook for another minute.
- Stir in ground turkey or sausage until fully cooked. Mix in quinoa, spinach, and cranberries; cook until heated through.
- Carefully flip the roasted squash cut-side up, fill each half with the mixture, top with cheese, and bake for an additional 10 minutes.
