  • 2 medium acorn squashes
  • 1 lb ground turkey or sausage
  • 1 cup cooked quinoa
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • ½ cup dried cranberries
  • ½ cup crumbled feta or grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Halve each acorn squash lengthwise and scoop out the seeds. Drizzle cut sides with olive oil and season with salt and pepper.
  3. Place the squash halves cut-side down in the baking dish and roast for about 25-30 minutes until fork-tender.
  4. In a skillet over medium heat, add olive oil and sauté diced onion until translucent. Add minced garlic and cook for another minute.
  5. Stir in ground turkey or sausage until fully cooked. Mix in quinoa, spinach, and cranberries; cook until heated through.
  6. Carefully flip the roasted squash cut-side up, fill each half with the mixture, top with cheese, and bake for an additional 10 minutes.
