  • 14 oz firm tofu, pressed and cubed
  • 3 tbsp tamarind paste
  • 2 tbsp light brown sugar
  • 3 tbsp low-sodium soy sauce
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 1 cup bell peppers, sliced (various colors)
  • 1 cup broccoli florets
  • 2 cups cooked rice or quinoa

Instructions

  1. Press tofu between paper towels to remove moisture and cut into cubes.
  2. In a bowl, whisk together tamarind paste, soy sauce, brown sugar, and ginger to create the glaze.
  3. Heat sesame oil in a nonstick skillet over medium heat and sauté tofu cubes until golden brown (10-15 minutes).
  4. Add bell peppers and broccoli during the last few minutes; cook until vibrant and tender.
  5. Pour the sticky glaze over tofu and vegetables; stir gently to coat.
  6. Serve over rice or quinoa, garnishing with sesame seeds or green onions if desired.
