  • 1 lb fresh squid, cleaned and cut into rings
  • 1 cup bell peppers (mixed colors), sliced
  • 4 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 3 green onions, sliced thinly
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • 1 tsp brown sugar

Instructions

  1. Clean and slice the squid into rings about half an inch thick.
  2. Heat a large skillet or wok over medium-high heat; add a splash of oil.
  3. Sauté minced garlic and grated ginger until fragrant (about 30 seconds).
  4. Add squid rings and stir-fry quickly until opaque (2-3 minutes).
  5. Introduce sliced bell peppers and green onions; sauté for another 2-3 minutes.
  6. In a small bowl, combine soy sauce, cornstarch mixture, and brown sugar; pour over stir fry and toss well.
