  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1 cup sweetened dried cranberries
  • 8 oz cream cheese (full-fat)
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. In a mixing bowl, combine fresh spinach, cream cheese, dried cranberries, garlic powder, and Parmesan cheese until well mixed.
  4. Carefully cut a pocket in each chicken breast without slicing all the way through. Stuff each pocket generously with the spinach mixture.
  5. Heat olive oil in a skillet over medium heat. Sear each stuffed chicken breast for about 3-4 minutes per side until golden brown.
  6. Transfer seared chicken to the baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let rest for five minutes before slicing. Serve with salad or roasted vegetables.
