- 12–15 large pasta shells
- 2 cups fresh spinach
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta shells in salted boiling water until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat, add garlic, and sauté until fragrant. Add spinach and cook until wilted; season with salt and pepper.
- In a bowl, combine cooked spinach, ricotta, half the Parmesan, salt, and pepper until creamy.
- Stuff each shell with the filling and place them in a greased baking dish.
- Sprinkle remaining Parmesan on top. Bake at 375°F for 25 minutes covered with foil; uncover for an additional 5 minutes until golden.
