Ingredients

  • 1215 large pasta shells
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta shells in salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat, add garlic, and sauté until fragrant. Add spinach and cook until wilted; season with salt and pepper.
  3. In a bowl, combine cooked spinach, ricotta, half the Parmesan, salt, and pepper until creamy.
  4. Stuff each shell with the filling and place them in a greased baking dish.
  5. Sprinkle remaining Parmesan on top. Bake at 375°F for 25 minutes covered with foil; uncover for an additional 5 minutes until golden.
