Description

Ingredients

  • 2 cups pomegranate juice
  • ¾ cup granulated sugar
  • 2 tablespoons unflavored gelatin powder
  • ½ cup sparkling water
  • Optional: Fresh pomegranate seeds for garnish

Instructions

  1. In a saucepan over medium heat, warm the pomegranate juice until just warm (do not boil).
  2. In a separate bowl, sprinkle gelatin over ½ cup cold pomegranate juice. Let it bloom for 5 minutes.
  3. Combine the bloomed gelatin mixture into the warm juice, stirring until fully dissolved.
  4. Add sugar and stir until completely dissolved. Remove from heat and let cool for 10 minutes.
  5. Slowly mix in sparkling water to maintain fizziness.
  6. If desired, fold in fresh pomegranate seeds before pouring into molds or jars.
  7. Refrigerate for at least 4 hours or until set.
  8. To serve, dip molds briefly in warm water and gently remove the jelly.
