- In a separate bowl, sprinkle gelatin over ½ cup cold pomegranate juice. Let it bloom for 5 minutes.
- Combine the bloomed gelatin mixture into the warm juice, stirring until fully dissolved.
- Add sugar and stir until completely dissolved. Remove from heat and let cool for 10 minutes.
- Slowly mix in sparkling water to maintain fizziness.
- If desired, fold in fresh pomegranate seeds before pouring into molds or jars.
- Refrigerate for at least 4 hours or until set.
- To serve, dip molds briefly in warm water and gently remove the jelly.
