Instructions

  1. In a large bowl, mix the active sourdough starter and water until well combined.
  2. Add the flour and salt, stirring until no dry flour remains; it should form a shaggy dough.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover it, and let rise at room temperature for about 4 hours or until doubled in size.
  5. Gently deflate the dough and shape it into a round loaf; place it on parchment paper or in a proofing basket.
  6. Cover and let rise for another hour.
  7. Preheat your oven to 450°F (230°C) with a Dutch oven inside.
  8. Transfer the dough to the preheated pot, score the top, cover, and bake for 30 minutes.
  9. Remove the lid and bake for an additional 15 minutes until golden brown.
