  • 1 bone-in ham (810 lbs)
  • 1 cup brown sugar
  • 1/4 cup Dijon mustard
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp black pepper
  • 1/4 cup cider vinegar

Instructions

  1. Preheat smoker to 225°F (107°C). Add your choice of wood chips for flavor.
  2. In a bowl, mix brown sugar, Dijon mustard, smoked paprika, garlic powder, and black pepper to create the rub.
  3. Score the ham’s surface in a diamond pattern for better flavor absorption.
  4. Generously apply the rub over the entire ham.
  5. Place a bowl of cider vinegar inside the smoker to maintain moisture.
  6. Smoke the ham for 4-6 hours until it reaches an internal temperature of 145°F (63°C).
