  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup orzo pasta (dry)
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Place chicken breasts at the bottom of the slow cooker and season with salt and pepper.
  2. Add minced garlic and chopped sun-dried tomatoes; pour in the chicken broth.
  3. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
  4. Shred the chicken in the slow cooker; stir in heavy cream and spinach. Cook for an additional 30 minutes.
  5. Boil water and prepare orzo according to package instructions; drain.
  6. Combine cooked orzo with the creamy mixture before serving topped with Parmesan cheese.
